These avocado deviled eggs are very easy to prepare and they make a perfect nourishing breakfast or an appetizer filled with protein, healthy fats, and vitamins.
AVOCADO DEVILED EGGS
Ingredients:
- 6 large Eggs
- 1 Avocado, pitted
- 1 1/2 tablespoon of Lemon juice
- 1 clove Garlic
- 1/4 tsp Cayenne pepper
- 1/2 teaspoon Sea salt
- 1/4 Jalapeno pepper, deseeded & minced (I didn’t use)
- 1/4 cup Cilantro, chopped (I didn’t use it this time)
Instructions:
1. Hard boil the eggs. Put the eggs in a pot and pour cold water over them. Turn on the heat. After the water starts boiling (usually after 9 minutes), set the timer for 6 minutes. After 6 minutes is past, immediately put the eggs into very cold water.
2. Peel the eggs and cut them lengthwise.
3. Remove the yolks from each egg and place the yolks in a separate bowl.
4. Blend yolks and avocado using an immersion blender. Or just use a fork.
5. Add lemon juice, cilantro, garlic, jalapeno, cayenne pepper, and salt. Blend again.
6. Use a spoon or a cake decorating tip and fill up the egg whites with the avocado mixture.
